Paleo Breakfast Casserole


Ingredients:


6 eggs
1 pint egg whites
1 package Jennie-0 breakfast sausage
1 medium zucchini, diced
1 medium yellow squash, diced
½ yellow onion, diced
2 cloves garlic, minced
3 oz baby portabella mushrooms, diced
1 cup chopped broccoli (I used frozen)
2 cups baby spinach
1 tsp olive oil
1/3 cup coconut milk – unsweetened!
2 T real bacon bits

Preparation:
Preheat oven to 350 degrees

In large skillet add olive oil and onions until browned, add and saute onions, zucchini, squash, broccoli, mushrooms & garlic until veggies are tender.

  In a separate pan cook sausage until heated through; remove from heat and let cool for about 5 minutes then add to veggie mixture.

While veggies are cooking, whisk eggs, egg whites & coconut milk in large bowl. 

Place spinach into an 13x9 baking dish layering the bottom and edges.

Add cooled veggies/sausage to the egg mixture & combine.

Pour the egg/veggie/sausage mixture into the baking dish and sprinkle bacon bits on top.


                               


Bake for approximately 40 minutes or until casserole is set.
 
Eat now, or let cool and refrigerate to enjoy during the week!  Just pop a slice into the microwave to warm.  I like to cut this into 8 big slices and freeze them.

Chocolate Chip Paleo Cookies



Ingredients:
  • 1 cup almond meal
  • 1/8 tsp salt
  • 1/8 tsp baking soda
  • 3 tbs melted coconut oil
  • 2 tbsp agave nectar
  • 1 tsp vanilla
  • 1 tbs unsweetened almond milk
  • Handful of Enjoy Life chocolate chips
Method:
  1. Preheat oven to 350 degrees.
  2. Combine dry ingredients.
  3. Combine and whisk wet ingredients.
  4. Add wet to dry ingredients and mix. 
  5. Separate dough into tablespoon sized balls and place on lined cookie sheet.
  6. Bake for 10-15 minutes.
  7. Let cool for 5 minutes and enjoy!

Plain and simple y'all....Cucumbers with salt and white vinegar.  

Go easy on the salt!  It's like a deliciously fresh pickle...but better.  If that even makes any sense at all:).  I eat this sometimes on a daily basis.



Paleo Cereal/Snack Mix

Another simple recipe!

I used a mixture of random freeze dried fruits, whole and slivered almonds, pumpkin seeds, hemp seeds, a tablespoon or two of cacao powder, and yeah I believe that's about it.

You really can throw anything paleo friendly into the mix but I really like how this turned out.  I can eat it plain or like cereal with almond or coconut milk.  When eating as cereal you can let the dehydrated fruit sit for a bit and absorb some of their moisture back and its surprisingly delicious:).  I wasn't sure how a cereal with no grains would work but this definitely sufficed!



 Caesar Dressing


Ingredients
  • 2 egg yolks
  • 2-3 tbsp. fresh lemon juice
  • 1 clove of garlic
  • 2 tsp. yellow mustard
  • ¼ tsp. horseradish
  • 2-3 tsp. anchovy paste or 1-3 anchovy fillets
  • ½ tsp. dried parsley
  • ½ tsp. sea salt or to taste
  • fresh ground black pepper to taste
  • 3 tbsp. extra virgin olive oil
Instructions
  1. In a blender add all of the ingredients except the extra virgin olive oil and blend to combine.
  2. Slowly drizzle in the olive oil.
  3. Store in an air tight container in the fridge.
  4. I would personally only keep it for 2-3 days
  5. makes one large buffet salad or several dinner salads.



 Banana Pancakes


Sausage and Eggs


This one is pretty simple....just egg and sausage.
I buy fresh ground pre-seasoned pork breakfast sausage and cook it before adding my eggs.  Sometimes I'll add a little bit of almond or coconut milk to my eggs to give them a little extra fluff.
